I love the classic Upside-Down Pineapple Cake.  You know, the one with the canned pineapple rings and maraschino cherries.  Our kids especially love it and enjoy helping spread out the fruit and brown sugar topping in the bottom of the pan!

Here is one we made earlier in the spring.  It lasted one night.

Back to the Upside-Down Peach Cake.

I had never made one before and still haven’t — HA!  But my mom has!  I purposefully bought a huge bag of peaches at the store on Sunday, knowing my mom would be here the next afternoon.  That woman can’t resist making a cake or cobbler with fresh fruit.  So she found this recipe and whipped it right up.  Y’all.  It was delicious.  Topped with vanilla ice cream, this is the perfect dessert for a warm summer night.

I didn’t get a picture because, well, Lilly Cate took a big serving spoon right to the middle of it.  She’s a girl after my own heart.
