Confession:  I have some weight to lose this year.

Confession:  I love to cook.  BIG food.

I’m talking fried chicken with mashed potatoes.

Pot roast with mashed potatoes.

Lasagna with mashed potatoes.

Just joking about that last one.

I think.

But it’s the start of a new year and I’m digging out some of my healthier recipes.  Cutting back on the carbs.  Saying no to the refined sugars.  Die, dairy, die!

What do we want?  Brownies!  When do we want them?  Now!

Anyways.

One of the recipes I love — and the kids…score! — is kind of like a Greek Grilled Chicken bowl.

So this morning I went to the grocery, got all my fresh herbs and organic boneless, skinless chicken breast, and just now finished my marinade for the chicken.

It started something like this…

ended like this…

and smells heavenly!

My plan for this heavenly Greek(ish) Grilled Chicken is to mix it with some feta, fresh tomatoes and black olives.  And take a bath in it.  I mean serve it with fresh green beans sauteed with garlic, olive oil and lemon!

Here’s the recipe for the marinade:

1/2 cup extra virgin olive oil

3 cloves garlic

1 Tablespoon fresh rosemary

1 Tablespoon fresh thyme

1 Tablespoon fresh oregano

2 lemons, juiced

pinch of salt

By the way, I got so excited making pancakes with LC yesterday morning, I burned my hand.  Literally.

I had just taken the skillet off the heat to go rinse it out for cooking eggs and my jam came on.  You know…actually, I can’t remember which song it was.  But if I had to guess it was James Taylor or Van Morrison.  That’s how we roll around here.  I raised the flaming hot skillet up, rocking out to the song that I’ve now forgotten, and the blazing hot butter from the pancakes dripped and rolled down my hand.  @*&% that hurt.  Jam session over.

Note to self:  don’t dance with hot skillet filled with butter in hand.

Note to you:  maybe don’t take cooking tips from me.
