Today has been pretty chilly, so we’re making some chili.
This recipe is a combination of several different chili recipes and a snap to throw together!
1 small onion, diced
1 pound ground beef
14.5 oz can diced tomatoes
1 Tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1 heaping Tablespoon tomato paste
2/3 cup water
14.5 oz can black beans or pinto beans (or both!), drained and rinsed
Heat a few tablespoons of olive oil in a large pot (I have the dutch oven that’s like Le Creuset but from Costco – and about a millionth of the price.) Add the diced onion and cook until it begins to soften. Add the ground beef.
Cook the ground beef until no longer pink and drain if necessary. (I use really lean ground beef so I don’t drain.)
Add the diced tomatoes, chili powder, cumin, salt, tomato paste and water and bring to a boil.
Cover and simmer for about 30 minutes.
Add the beans and continue cooking for another 15 minutes.
Serve with shredded sharp cheddar, lime wedges, tortilla chips or if you’re trying to be healthy in the new year like me…a big fat margarita. Just kidding. It’s noon, people. And I’m home alone with my four babies. And a puppy. And a partridge in a pear tree.
